Apple and Green Cardamom Cake

For 6 people
Preparing 20mn
Cooking time 20 – 25mn


  • 4 apple
  • 50cl of water
  • 150g + 40g brown sugar
  • 150g of flour
  • 1 bag of yeast
  • 10cl of milk
  • 2cl of neutral oil
  • 60g of butter
  • 3 teaspoons of cardamom
  • 4 eggs
Madagascar Green Cardamom Apple Cake


  1. Peel and cut the apples in half, remove the heart and seeds

  2. Boil 50cl of water

  3. Add 40g of brown sugar

  4. Add 3 teaspoons of cardamom

  5. Put this preparation off heat and plunge in the apples (then put it aside for later)

  6. Beat the 3 eggs with 150g of brown sugar and stir in 150g of flour

  7. Add a bag of yeast, 10cl of milk and 2cl of neutral oil to your preparation

  8. Butter your pan

  9. Sprinkle with brown sugar according to your tastes and the size of your mould

  10. Cut the apples (previously prepared in step 5) and place them at the bottom of your mould

  11. Pour in the dough afterwards

  12. Bake 20 to 25 minutes at 180°C

  13. After 20 to 25 minutes of baking, take your cake out of the oven

    Don’t forget the little tip to check with the tip of a knife to see if your cake is cooked well 🙂

  14. Brush your cake with the cardamom apple syrup set aside in step 5) before turning it over

  15. Unmould cake like tatin

    Let the cake cool a few minutes before serving with a good vanilla ice cream or salted butter caramel ( for the greedy ones )
