Orange Peel and Green Cardamom Muffin

  • 300g of flour
  • 1 bag of baking powder
  • 100g of sugar
  • 1 pinch of salt
  • 250ml of milk
  • 2 eggs
  • 75 g melted butter
  • 1 tablespoon orange zest (which corresponds to the zest of an orange)
  • 1 tablespoon ground green cardamom
  • 36 whole hazelnuts, thinned


  1. Preheat the oven to 200°C

  2. Mix the cardamom and with a grater, collect the orange zest

  3. In a salad bowl, combine orange peel, ground cardamom, flour, yeast, salt and sugar

  4. Mix the melted butter, eggs and milk in another salad bowl and gently stir into the flour mixture

  5. Place paper trays in muffin pan, half fill, place 3 hazelnuts per muffin and cover with remaining batter

  6. Bake and cook for 25 minutes

* Cardamom is both lemony and peppery
